We can all stand a little spice too, so we eat a Mexican food profile every week, I would say.
In the first of our new series, Simple Swaps, things to make instead of buy, we looked at what was in a regular store bought taco seasoning packet, and why we might NOT want to eat sugar substitutes, plastic and seed oils in our spice mix (!? I’m not even kidding)
Since it’s so easy to make, I’ve been knocking it together for about 10 yrs now, and I’m not sure I’ve made it the same way twice! There are some that have blown our heads off, when I’ve been a little heavy-handed with the cayenne pepper!
And other times we’ve barely noticed it, but we’ve had distinctly orange plates from the turmeric!
We use it a LOT is what I’m saying. But it’s not limited to flavouring chicken you can wrap in a tortilla, oh no friend!
Enter…. The taco Bowl
Why you’ll like this Easy Chicken Taco Bowl
- Easy to make, especially if you have an Instant pot
- Cheap to make – can be made with leftovers if not a big family
- Healthy food that’s really tasty
- Filling – serve over brown rice and you increase your fibre to keep you fuller for longer
- No nasty ingredients – you know exactly what’s in it from the seasoning to the toppings.
- Customisable – you can make it exactly to your family’s taste. Don’t like sweetcorn? Swap it for beans, or leave it out completely.
What You’ll Need
Large cooking pot/ Instant Pot
Ingredients
Butter or Lard for frying
Onion and peppers
Chicken – Either chicken breasts, diced, or left over chicken from a carcass
Tomatoes – I use tinned chopped tomatoes, but you could use fresh if you wanted
Taco Seasoning – either homemade or store bought
Rice to serve,
Toppings – Avocado or guacamole, cheese, sour cream, tortilla chips, and salsa are all great choices
Method
- I make mine in the Instant Pot, but you could just make in a stock pot on the hob in exactly the same way, just cooking it for a longer time.
Start by browning the onions and pepper in some lard or butter
When cooked through add the chicken to brown
Once the chicken has browned, add in the sweetcorn and/or beans, tomatoes and taco seasoning, and stir to combine.
If using the Instant Pot, place the lid on, making sure the vent is closed, and pressure cook on high for 10 mins
If using a stock pot on the stove, stir and heat gently (low-medium heat) for around 25 mins, until chicken is cooked through.
Serve over rice, or on it’s own as a stew, topped with Avocado, tortilla chips and cheese.

Easy Chicken Taco Bowl
Equipment
- Instant Pot/ Stock pot
Ingredients
- 1 tbsp Butter or Lard
- 1/2 Large onion, sliced
- 1 Bell pepper, sliced
- 2 Large Chicken breasts, Diced
- 1 Tin Chopped tomatoes
- 2/3 Cup Sweetcorn
- 2 tbsp Taco seasoning
Instructions
- Brown onions and peppers in the fat
- Add chicken to brown on all sides
- Add tinned tomatoes, sweetcorn and seasoning, stir to combine
- Place lid on the Instant Pot, making sure the vent is closed, and set to pressure cook on high for 10 mins.
- Once cook time has passed, carefully manually vent and open the lid.
- Serve over brown rice and top with favourite toppings
- Enjoy!
