I love Autumn, mainly for the apples. I’m not so much a pumpkin spiced girl, even though I make the spice for my Love.
I’m specifically a cinnamon apple girl.
Which is strange since I don’t eat a ton of apples fresh. Apples can be so varied in texture and sourness that there are only a few that I really like.
Unless you cook them. and sprinkle them with brown sugar. And cinnamon. Then I’m all in!
Apple pie, apple crumble, apple and cinnamon oatmeal, apple fritters, sticky toffee apple cake, and now, this gorgeous French apple cake.
I first came across this at a friend’s house and practically begged her for the recipe. I have made this quite a few times and always text her to thank her.
One of the benefits of this cake is you can have the apples as you like them. For us, because my husband doesn’t like it when cooked apples go mushy, I keep them sliced so they hold their shape and texture a little more.
But if you prefer smaller pieces of apple, go ahead and chop them up a bit more. That’s the beauty of it, it’s all how you prefer it.
