What’s for dessert?
I’ve heard this line so many times in my 23 years as a parent! ‘Mama, what’s for dessert?’
I have to admit, they probably get it from me.. I used to skip parts of my dinner just to get to dessert, when my parents weren’t looking! And now the littlest, Hannah does exactly the same.
Her favourite is to push her plate away after a few bites of usually meat and say, ‘all finished, what’s next!?’
It takes some coaxing to get her to finish, I can tell you!
I feel better about giving this as a treat though!

What You’ll Need
A muffin tin
Muffin cases/ Liners (optional, but I find it easier to pop them out of the tray in the liners)
Glass bowls
Spatula
Double boiler, for melting the chocolate, or heat in the microwave CAREFULLY, so you don’t burn the chocolate (I have done than many times, 2 seconds I looked away, honestly!)
A freezer
Ingredients
Good quality chocolate
Nut butter of choice, but these are Peanut butter cups, so I used Peanut ( preferably natural, just the nut)
How to make
Line a muffin tin with silicone liners.
Break up the chocolate into a heat safe bowl and begin to melt over a pan of hot water.
Once the Chocolate begins to melt, add the coconut oil and mix together.
While this is melting, in a separate bowl mix together the peanut butter and protein powder. This will be quite stiff and make a paste.
Once the chocolate and coconut oil are melted together, place a small amount in the bottom of each liner and allow to cool. I speed this up by throwing them in the freezer just for a few minutes.
Once this is set, put the peanut butter mixture into the cases. I did this with my fingers, its easier to mould it and push it to where it needs to go in the cases.
Then just top with the remaining chocolate and place back in the freezer to set.
Remove from the muffin tin and store in an air tight container of zip lock bag in the freezer for up to 3 months, but good luck in keeping them that long!!

Easy Peanut Butter Cups
Equipment
- Muffin tin
- Glass bowls
- Spatula
Ingredients
- 1 1/2 Cup (250g) Good Chocolate
- 1/3 Cup (80g) Natural Peanut Butter
- 1 Tbsp Coconut Oil
- 1 Scoop Vanilla Protein Powder
Instructions
- Line the muffin tin with silicone muffin liners
- Break up chocolate and place into a heat proof bowl. Melt on a double boiler or in the microwave
- Once melted a little, add the coconut oil and stir to combine
- Place a little in the bottom of each muffin case and let set
- Meanwhile mix the peanut butter and protein powder together into a thick paste
- Using your fingers, push a layer of paste onto the set chocolate in the cases and then top with the rest of the chocolate.
- Place in the freezer to set
- Enjoy!
